Food AI: A game changer for Australia’s F&B sector
Artificial intelligence (AI) will be central to the future prosperity of Australia’s food and beverage sector, as it transitions to an era in which AI is an essential element in the design, manufacturing and delivery of products that consumers love.
Australia’s Food and Beverage Accelerator (FaBA) has developed a Food AI White Paper, Food AI: A game changer for Australia’s food and beverage sector, which provides 37 recommendations for businesses seeking to actively embrace responsible AI.
An initiative of FaBA’s Innovation Pathways Program, led by Professor Janet McColl-Kennedy from The University of Queensland Business School, the White Paper explores how Australian food and beverage businesses can best prepare for a future where the use of AI is inevitable.
“AI brings exciting opportunities for the food and beverage sector, such as AI-powered tools that can optimise agricultural productivity, improve food safety and design new foods that align well to consumer tastes and preferences,” said Professor McColl-Kennedy.
“We are transitioning to a world in which robots and people will work side-by-side to produce and process our food, and where AI will enable us to accurately predict consumer preferences and then guide food design.”
Professor McColl-Kennedy said there would be challenges and emphasised the need for clear policy settings, responsible implementation and transparency relating to AI.
“AI offers incredible potential but collaboration between government, business, agri-food scientists and AI experts will be crucial if we are to build consumer trust in the new technology.”
The report’s recommendations can be summarised into 10 key themes:
- Encourage collaboration between food scientists, industry, businesses and experts in AI to design new food and beverage options
- Utilise AI to predict consumer preferences
- Harness AI to improve food safety and management
- Leverage complementarities between AI data processing and human capabilities
- Incorporate AI-enabled technologies working with humans to deliver food and beverages
- Invest in scalable AI solutions, prioritising sustainability and ethical practices
- Build transparency and trust across the supply chain
- Co-design frameworks, guidelines and guardrails for AI implementation
- Enhance AI literacy
- Design policies that encourage the integration of AI technologies across the ecosystem.
Dr Chris Downs, FaBA Director, said the White Paper provided clear guidance to navigate the use of AI in Australia’s food and beverage sector.
“This White Paper has the potential to help ensure AI is responsibly implemented across the food and beverage sector, which will not only improve the industry but also lead to better outcomes for consumers and help us realise a more sustainable future,” Dr Downs said.
Food AI: A game changer for Australia’s food and beverage sector was developed as the result of a Round Table involving industry, government and academia in late 2023. FaBA acknowledges the time and expertise of the 65 experts who contributed to the Round Table and subsequent White Paper development.
