Dr Davor Daniloski is a Research Fellow at The University of Queensland, specialising in milk protein chemistry, particularly β-casein and its genetic variants.
Davor holds a PhD in Food Science and Technology from Victoria University, Australia, and Teagasc, Ireland, where his research focused on establishing structure-function relationships in dairy proteins before and after processing and digestion. With over 30 peer-reviewed publications and numerous international awards, including The Early Career Scientist Prize from the International Dairy Federation (USA) and the Gold Medal as The Walsh Scholar of the Year (Ireland), Davor is recognised for his impactful contributions to the field.
His research has spanned leading institutions such as Teagasc (Ireland), the University of Wisconsin - Madison, and FrieslandCampina (The Netherlands), where he gained extensive expertise in protein chemistry, in vitro digestion models and dairy processing technologies.
Alongside his research, Daniloski serves as an editor and reviewer for academic journals. He is also dedicated to mentoring the next generation of food technologists through his role as an Academic Sessional, reflecting his commitment to innovation and sustainability in food science.
