Anqi Li is a PhD candidate at the Queensland Alliance for Agriculture and Food Innovation (QAFFI) at The University of Queensland and is actively involved in the Premium Food and Beverage Program.
She holds a Master’s degree in Food Science from Shaanxi Normal University and a Bachelor’s degree in Food Science and Engineering from Huazhong Agricultural University.
During her Master’s project, Anqi developed expertise in polysaccharide gel characterisation and texture modification.
Currently, her research focuses on understanding the relationships between food gel characteristics and their nutritional functionality in vitro.
